Tasting Notes: A veil of indigenous yeasts spontaneously develops on the surface, protecting the wine from total oxidation and giving it its unmistakable aromatic profile. On the palate and nose, it expresses an extraordinary complexity dominated by dried walnut, curry, saffron, baked apple, and mushrooms, supported by a distinct saline minerality. Despite the intense olfactory hints and generous structure, it has an extremely dry taste, being one of the driest wines in the world as residual sugars are practically absent. It pairs divinely with the famous chicken with morels and cream, and the perfect regional pairing is with aged Comté cheese (18 to 36 months). Given the natural presence of sotolon (the molecule that gives the curry aroma), it is ideal with spicy Indian or Asian dishes. It possesses an almost infinite aging potential, capable of evolving and preserving beautifully for 50, 100, or more years.
